Stuffed Peppers

Recently we made these stuffed peppers! They were so good and I'm not normally a pepper person.
We were very excited to try these and we weren't let down.
   
     First we pre-heated our over to 350. In the recipe it says to grease the sheet with coconut oil, but we didn't have any so we used tin foil. Tin foil worked just as good.
    Next, we used mini peppers in stead of bell peppers so they could be more bite size snacks. I cut them in half  to make little boats. Also we spooned out the inside seeds.


Then, We mixed together the meat of choice (we used Italian Sausage),  and eggs. In a food processor we blended the kale, onion, and garlic. Then we added the two mixtures together and this is what it looked like. 
My co-chef and I spooned the meat mixture in to the mini peppers.

They were in the oven for 40 minutes. We kept them in the same amount of time the regular peppers to make sure the meat was fully cooked. 5 minutes before we took them out of the even we put some mozzarella on them and put them back in, 

Lastly we put some on little plates to see what our students and staff thought.
